Carrot cake recipe

So as I love baking and I thought I would share with you this  delicious carrot cake recipe. It is super simple and doesn't take hours to make.
You will need:
175 ml sunflower oil
175g light muscovado sugar
3 large eggs lightly beaten
140g grated carrots
100g raisins
Grated zest of an orange
175g self raising flour
1 TSP bicarbonate soda
1 TSP cinnamon
1/2 teaspoon nutmeg
For the icing:
100g butter
200g icing sugar
Zest of an orange
Sprinkles (optional)
So firstly preheat the oven to 180c and line a 8 inch round cake tin

Add the sugar, oil and eggs into a large mixing bowl. Lightly mix with a wooden spoon. Stir in the grated carrots, raisins and orange zest. 

Sift the flour, bicarbonate of soda and spices into the bowl. Mix everything together. 

Pour the mixture into a baking tin and bake for 40-45 mins until it feels firm and springy to the touch. Leave to cool on a wire rack. 

Cream the butter and icing sugar and add in the orange zest,spread the icing onto the cake once cooled and decorate with sprinkles.
